Variations: There are so many ways to tweak a recipe, and lots of them are presented throughout.
Throughout the book you will notice a number of dishes are marked as Fork in the Road recipes. This addresses the need to adapt a recipe to suit the needs of a family where picky palates are prevalent. Basically a recipe is made, fairly simply, up to a certain point. Then, you continue on with the rest of the dish, adding some additional ingredients and flavors for those with more adventurous palates. It allows you all to share the same dinner. Without dumbing down food for your kids, or conversely sweating over a meal that your kids and their friends will refuse to eat usually while guests are over, it seems , you will be able to introduce different flavors to your dinner table.
If you think the more flavored version of a dish will be a stretch for your kids, keep their portions simple, and let them try yours. To be a good mom, you do not have to cook every meal, or make everything from scratch, or know the provenance of every morsel of food your children eat. Give yourself a break.
This cooking thing should be a little bit fun. We need to figure out how to capture some joy in the kitchen, because guess what? We get to make dinner just about every night! And we can approach this task as though we are being asked to regrout our bathtub nightly, or approach it with a certain amount of joie de vivre. We might as well pick that joie thing, because as I mentioned possibly twice already we have to do it anyway.

Also, while there is plenty of good food-oriented television programming and interesting writing about food, there is also a lot that is. Certainly we should all be aware of where our food comes from, and pick up a thing or two about sustainability, eating locally, and the like. You, my friend. No one is enchanted by people who say, My kids are such wonderful eaters, they eat everything. The only responses are, Wow! Good for you, and good for them! Who eats everything? And why does eating everything make you such a spectacular human being?
